Baked potatoes with Parma ham in cheese and garlic sauce – recipe

  • 8 potatoes for baking
  • 12 slices of Parma ham
  • 2 cloves of garlic
  • 2 sprigs of rosemary
  • 4 sprigs of thyme
  • 40ml cream 36%
  • 50g of Gouda cheese
  • 20g of butter
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 2 pinches of nutmeg
  • 100 g of bacon
  • 500 ml of buttermilk
  • A bunch of chives
  1. 1Peel the potatoes, rinse in cold water and cut into thin slices on a mandolin. Put back into cold water for a few minutes.
  2. 2Pour the cream into a small saucepan, add the garlic and herbs and reduce by 1/4.
  3. 3Grate the cheese and grate the Parmesan cheese and place in a bowl.
  4. 4Dry the potatoes, season with salt, pepper and nutmeg.
  5. 5Grease the baking dish with butter, put 1 layer of potatoes, top with 3 slices of Parma cheese cut into smaller pieces, sprinkle with a little cheese and pour a little cream.
  6. 6Add another layer until all the potatoes are used up.
  7. 7Serve as a separate dish with buttermilk and bacon cracklings.
  8. 8We put the rest of the butter on top and put it in the oven preheated to 180 ST. C for 25-30 minutes.
  9. 9Serve with buttermilk and fried bacon.

Cheese onion patties with pork – recipe

  • 1 package of puff pastry
  • 500g minced good quality pork
  • 1 teaspoon of granulated garlic
  • 1/3 teaspoon of nutmeg
  • 1/3 teaspoon of cinnamon
  • 1/3 teaspoon of cumin
  • 1/3 teaspoon of cayenne pepper
  • 60 g of grated Gouda cheese
  • 4 onions
  • ½ teaspoon of salt
  • ½ teaspoon of black pepper
  • 1 teaspoon of cane sugar
  • 1 egg for brushing
  • 2 tablespoons of black cumin for sprinkling
  1. 1Season the minced meat with all the spices, then add the grated cheese and mix thoroughly. Set aside while the onions are ready.
  2. 2Chop the onions into feathers, pour a little rapeseed oil into the pan and add the onion. Then add salt, pepper and sugar and caramelize the onion until soft.
  3. 3Add the hot onion to the minced meat and mix thoroughly.
  4. 4Take the puff pastry out of the fridge and cut it into 2 parts lengthwise.
  5. 5Put the stuffing in the middle of the dough, sprinkle with a bit of cheese (additionally) and wrap the dough in a roll, carefully gluing its edges.
  6. 6 Then cut into 8 smaller pieces, place on a baking sheet, brush with beaten egg and sprinkle with nigella seeds and bake in the oven for 25 minutes at 180 degrees C

Rice with beef in tomato and cheese sauce – recipe

  • 400 g of minced beef
  • 1 onion
  • 1 clove of garlic
  • 1 teaspoon of dried onion
  • 1 teaspoon of granulated garlic
  • ½ teaspoon chili
  • ½ teaspoon of thyme
  • 1 teaspoon of salt
  • 200 ml of milk
  • 100 ml of beef broth
  • 300 ml of tomato passata
  • 1 cup of rice
  • 1 cup of frozen peas
  • 2 cups of Gouda cheese
  • 1 bunch of chopped garlic
  1. 1Chop the onion and garlic finely, pour a little oil into the pot and add the chopped onion and garlic. Lightly glaze and add the beef.
  2. 2When the meat is lightly fried, add the spices, then add the rice and cook for another minute.
  3. 3Add the milk, broth and passata, cover and cook until the rice is completely tender and absorbs most of the liquid.
  4. 4Finally, add freshly grated cheese, mix thoroughly and sprinkle with chopped coriander.

Cheese fondue in pumpkin – recipe

  • 1 medium-sized pumpkin (approx. 30 cm in diameter)
  • 200 g grated Gouda cheese
  • 200 g of grated Tylżycki cheese
  • 200 g of grated Ustrzycka roulade (smoked cheese)
  • 5 tablespoons of corn starch
  • 3 shallots
  • 2 cloves of garlic
  • 1 teaspoon of fresh thyme
  • 200 ml of white wine
  • 200 ml cream 30% (liquid)
  • salami slices
  • baguette
  • dried meats
  1. 1We preheat the oven to 160°C. Cut the top off the pumpkin and scoop out the contents. Bake the pumpkin on baking paper for about 30 minutes, until the pumpkin is soft (without the cut top).
  2. 2In a bowl, mix the cheeses and cornstarch. Add chopped garlic, shallots and thyme. Pour in the white wine and cream.
  3. 3Pour the mixed ingredients into the center of the pumpkin.
  4. 4We put the whole thing in the oven (without the hat) for about 30 minutes at 180 degrees. Stir if necessary and return to the oven for 15-30 minutes.
  5. 5Serve with bread, cold cuts and pickles.
